Zucchini Quiche (no crust)

2 1/4 lbs zucchini 1 cup onion or sweet onion, chopped3 tbsp butter, salted 3/4 cup Swiss cheese, shredded 1/2 cup Parmesan cheese, grated 1 cup 2% milk 8 large eggs8 oz cream cheeseSalt & pepper to taste
1. Saute onion in butter until translucent. Add zucchini and saute until tender. Strain out liquid and spread on bottom of a large casserole dish.
2. Spread half of Swiss cheese and Parmesan cheese on top of zucchini.
3. Blend milk, eggs, cream cheese, salt & pepper together, and pour mixture on top of zucchini and cheeses.
4. Add the rest of the cheese on top and bake.
Serving Size: Makes 8 servings
