DRESSING: Lemon Turmeric Tahini

Ingredients
1 fresh turmeric root (about thumb size), peeled and sliced2 tbsp Tahini 1 tbsp Honey (for vegan option use other sweetener)juice of one whole lemon 1 tsp Lemon zest1 tsp Ginger Root, peeled and sliced 2 tbsp Extra Virgin Olive Oil .25 tsp Salt .25 tsp Pepper, black .25 cup Water
Directions
Combine first 7 ingredients in blender or food processor.
Add water as needed to make it blend easily and come to the right consistency.
Add salt and pepper to your taste.

Serving Size: Makes about 8 two-tablespoon servings.
