Tofu stirfry

Ingredients
Tofu, extra firm - one block1 Summer squash, small or med1 zucchini, small or med1 orange bell pepper10 asparagus spears, small
Directions
cube one block of extra firm tofu, add to a hot skillet using olive oil to brown. While tofu is browning slice bell pepper, zucchini, and summer squash. Add these to the skillet as well as asparagus spears with the ends trimmed.
Heat until fork tender. Makes 4 3/4 cup servings.
