Gluten Free Lemon cookie

2 cup Bob's Red Mill Gluten Free Baking Flour (1 to 1 ratio of reg flour) (by TRICIARICE) .5 tsp Salt (table) (by CYNDYY1) .5 cup Butter, salted 1 large Egg, fresh, whole, raw .5 tsp Baking Soda 1 cup Granulated Sugar 1 tsp Vanilla Extract 2 tbsp Lemon juice
Preheat oven to 350 F
mix together flour, baking soda, salt, and 1 TBS lemon zest. In a separt bowl blend together sugar and butter, then add egg, vanilla and lemon juice till well mixed. Beat in Flour mix till smooth.
Scoop 1TBS batter onto greased cookiesheet and bake 15-20 min till golden on edges. remove from oven and let cool on pan 2 min, then move to rack to finish cooling.
Serving Size: makes 36 cookies
