1 head, large (6-7" dia) Cauliflower, raw 2 cups, chopped Onions, raw 3 cloves Garlic, minced 1 tbsp Olive Oil 1 tsp Cumin seed .25 tsp Coriander seed 4 tsp Curry powder1 tsp Garam Masala (Penzy's) .5 tsp Salt 1 large can Hunt's Diced Tomatoes2 cup Peas, frozen 1 cup Coconut Milk
steam cauliflower for 5 minutes, then set aside
Heat oil in pan, add garlic & onions, saute until tender (5 min.)
Add cumin, coriander, curry powder, garam masala & salt. Stir .
Add tomatoes peas & coconut milk. Bring to a simmer.
Add cauliflower & cook for 5 minutes until well combined.
Serving Size: makes four hearty servings
