C's Blueberry Muffins

1 cup Quick Oats1 cup Cultured Lowfat buttermilk1 egg1/2 cup light brown sugar1/2 cup of canoloa oil1 cup all purpose flour1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/4 tsp vanilla1/4 tsp vanilla1 1/2 cups of fresh blueberries
Preheat oven to 400 degrees.
In a medium bowl, combine oats & buttermilk
stir just until all the oats are covered with the buttermilk and let it stand for 30 minutes.
In a seperate bowl combine: flour, baking powder, baking soda, & salt.
In the bowl with the oats and buttermilk add in the brown sugar , egg, vanilla extracts and canola oil and mix well-----Take this mixture and combine with the flour mixture ----this mix will be very thick so mix well and than fold in your blueberries. Once combined you can spoon the mixture into a muffin cup pan and put it in a 400 degree oven for 18 minutes.
This mixture makes between 12 to 16 muffins.
