Italian Green Beans

1 lb fresh green beans (frozen are also okay)6 or more cloves of garlic2 tbs olive oilcoarsely ground salt and pepper to taste
Rinse and snap the green beans.
Bring a large pot of water to a boil.
Toss the green beans into the water and let cook for a couple of minutes. Not too long since you want them to be crisp still. Just about until they turn bright green.
Drain the green beans.
Slice the garlic and put it with the olive oil in a large saute pan.
Heat the oil and garlic on a high heat.
Once the garlic starts to turn crisp and brown add the green beans.
Stir and cook until the are very well done. Some of the beans may wilt and turn brown, but that's okay.
Add coarsely ground salt and freshly ground pepper to taste.
Serve when the beans are thoroughly cooked.
It is possible to make this recipe with even less oil if you use a nonstick pan and cooking spray.
