Quinoa & Sausage salad

Ingredients
0.75 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1.5 cup Soup, chicken broth, canned, less/reduced sodium 4 serving Al Fresco Spinach & Feta Chicken Sausage (by IFFILAYO) 1 cup Tomatoes grape tomatoes cut in 1/2 or 1/44 tbsp Basil chopped2 TBsp Tarragon fresh chopped (optional)12 medium (4-1/8" long) Scallions, raw - chopprf1 tbsp Vinegar - Natural Rice Vinegar (Nakano)
Directions
Bring broth to a boil. Add quinoa, reduce heat cover and simmer for 15-20 min until all the liquid is gone.

Remove sausage from casing, crumble and brown in a skillet. In a bowl combine all ingredients.

If adding to greens allow to fully cool first.

If desired stuff into a tomato, zucchini boat, pepper or onion & bake at 350 for 30-40 min.
