hearty italian vegetable stew

1 lb chicken breast, skinless and boneless1 lb carrot sticks, cleaned and sliced1 can peas1 can corn1 can green beans16 oz can diced garlic basil tomatoes16 oz chicken broth1 cup brown rice1 large onion, diced1 can dark red kidney beans1 can light red kidney beans
season chicken with salt and pepper. bake at 400 degrees for 30 minutes or until done.
mix remaining ingredients in large crockpot.
when chicken done, cut into cubes and add to crock pot.
cook on low for 6 hours or until carrots are soft.
makes 16 one cup portions. best if topped with 1 tbsp parmesan romano cheese.
