Tuscan Style Italian Sausage & Kale Soup

Ingredients
.66 tbsp Extra Virgin Olive Oil 4 serving Johnsonville Hot Italian Link Sausage - 1 link 1 cup, chopped Onions, raw 3 clove Garlic 4 serving Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 1 cup/serv 3 medium (2-1/4" to 3-1/4" dia.) Potato, raw 2.5 cup, chopped Kale 2 serving 1/8th tsp red pepper flakes (by BUDDY_LOVE) .5 tsp Salt .5 tsp Pepper, black
Directions
1. In large soup pot over medium heat, heat oil. Add sliced sausages, cooking until browned. Drain most of fat.
2. Add chopped onion to sausage and cook until translucent, about 3-4 minutes. Add garlic (minced) and cook one more minute.
3. Add chicken broth, potatoes with skin cut in one inch cubes, chopped kale, and salt. Bring to boil, then reduce heat and cover, simmering about 10-15 minutes until potatoes are done.
4. Optional - add a few tablespoons of soup broth to 1/2-1 C room temperature milk, then slowly add to soup while stirring. Not included in ingredients or nutritional information.
