Whole Wheat Banana Muffins

Ingredients
6.25 Cups Granulated Sugar3.25 Cups Vegetable Shortening14 Eggs2 Tbsp Vanilla Extract10.75 Cups Mashed Ripe Bananas2.5 Cups Whole Wheat Flour6 Cups All Purpose Flour7 Tsp Baking Soda3 Tsp Salt
Directions
Cream sugar and shortening together in a mixer on medium speed until fluffy. Add in eggs and vanilla and blend on low until well combined. Add mashed bananas and mix on medium speed for 10 minutes.

Combine dry ingredients, then add to the mixer bowl. Mix until combined. (Add nuts if desired)

Portion into muffin tins using a 2 ounce ice cream scoop, or fill until about two thirds of the way full.

Bake at 325 for 12 to 18 minutes.

Makes 10 dozen (120) muffins.
