Ingredients
1.0 tbsp Butter, salted0.75 cup Whipped Cream, pressurized2.0 1tsp Olive Oil0.5 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh2.0 clove Garlic1.0 cup, sliced Zucchini1.5 cup 365 Organic Diced Tomatoes1.0 cup Squash - Yellow and Zucchini0.06 cup Flour - Gold medal all purpose flour
Directions
Slice all veggies into even sized pieces, roughly 1/8" thick. Prepare cream sauce by heating butter inn sauce pan and adding flour. Cook for 1 to 2 minutes. Mix cream and water and heat in microwave for 30 seconds. Add to sauce pan and heat, stirring until thickened and coats the back of a spoon. Season with salt, pepper and nutmeg if desired. In an 8 x 12 oven dish layer tomatoes, garlic Italian seasoning and 1/4 tsp red chili flakes. Swirl in cream sauce. Arrange veggies in a spiral or rows on their side alternating colors. Drizzle with olive oil and session with salt and pepper. Cover with parchment paper. Bake at 375 for 50 to 60 minutes. Serving Size: Six servings
