1 Bag (1lb) of 17 Bean & Barley Soup Mix (Trader Joe's or other grocery brand)6 cups of Vegetable Broth1 cup of chopped onion1 cup of chopped celery1 cup of chopped carrot1 cup of chopped bell pepper1 tsp. of fresh or dried basil1 clove of garlic2 Tbsp. olive oil1 bay leaf1/2 tsp. Italian seasoning1 Can of stewed Tomatoessalt & Pepper to taste
Soak beans overnight in about 6-8 cups of water. Then add soaked, rinsed, and drained beans to 6 cups of the vegetable broth. Then the rest of the ingredients. Simmer covered for about 1.5- to 2 hours or cook real slow all day. Check liquid levels throughout the cooking process and add when necessary. Salt and Pepper to taste. Makes 8 Large servings.
