Smoky Split Pea Soup

1 1lb. bag of Split Peas, rinsed, drained (check for bad pieces)1 12 oz Uncured Smoked Turkey Sausage, cut into 1/4 inch slices3 carrots, (7-8" long) cut into even bite size pieces1 medium Yukon Gold Potato, peeled and diced1 sweet onion, chopped 6 cups Chicken Broth 99% Fat Free 2 stalks celery, washed and sliced into 1/4 slices1.5 tbsp Extra Virgin Olive Oil Salt and Pepper to your taste.
Heat a Dutch oven over medium high heat. Add oil and brown the sausage on each side. Once browned, remove to a plate or bowl.
Add onions, carrots, celery, and potato and cook to soften. (3-5 minutes)
Add broth, peas, and sausage. Bring to a boil over medium high heat, then reduce to simmer for about 45 minutes. Stirring occasionally.
Makes 6 equal servings. Serve with a tossed salad or a slice of cornbread.
