Cheesy, Spicy, Black Bean Sweet Potato Casserole

3 cup Black Beans - canned - Kroger 2 sweetpotato, 5" long Sweet potato 2 large Egg, fresh, whole, raw 1 tbsp *McCormick ground cumin (by CHGOMOMMA) 1 dash Salt 1 dash Pepper, black .5 tbsp Pepper, red or cayenne 1 tbsp Chili powder .5 tbsp Garlic powder 1 cup Salsa 1.5 cup Cheese, Sharp, Cheddar, Kroger, Shreded (by GINALAUGHED)
Preheat oven to 350 degrees.
Skin and shred sweet potatos. In large bowl, mix spices, black beans, sweet potatoes and 1 cup cheese.
In small bowl mix eggs and salsa.
Pour sweet potato mixture in casserole dish and top with egg and salsa mixture. Sprinkle remaining cheese on top and bake for 30 min.
Serving Size: makes 8 pieces in rectangular casserole dish
