1 cup White Rice, long grain, cooked 3.5 cup Great Value Diced Tomatoes (in Tomato juice) 2 cup (8 fl oz) Chicken Broth 16 oz Wegmans Organic 93/7 Ground Beef, Grass Fed 1.5 cup, chopped Onions, raw 0.5 cup, chopped Green Peppers (bell peppers) 1 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil 0.5 tsp Cumin seed 3 tbsp Chili powder 1 cup, shredded Cheddar Cheese 1 tsp saltpinch pepper (to taste)
Preheat oven to 375 degrees F. Brown ground beef in large pot with coconut oil. Add onions and green peppers, diced tomatoes, rice, chicken broth, cumin, chili powder, salt and pepper. Simmer 30 minutes covered, stirring occasionally. Place in 13x9in pan and pat down smooth. Add shredded cheddar cheese to top and spread evenly. Bake 15 minutes.
