Cauliflower and Cheddar Soup

Ingredients
2 tbsp Butter, salted 1/2 cup, chopped Onions, raw 3 cups Cauliflower, raw 1 1/2 cups (8 fl oz) Chicken Broth 1/4 cup Wheat flour, white, all-purpose, unenriched 2 1/4 cup Milk, 2%, with added nonfat milk solids6 oz (or 1 1/4 cups) Cheddar Cheese 1 dash Pepper, black 1 serving Croutons, Fresh Gourmet Butter & Garlic 6 croutons
Directions
1. Melt butter in large saucepan - saute onion until tender.
2.Stir in cauliflower and chicken broth. Bring to a boil.
3. Cover, reduce heat and simmer for 12-15 min til tender.
4. Combine flour and milk.
5. Add to pan. Cook and stir over med. heat til it boils and thickens.
6. Remove from heat. Add cheese. Stir until melted.
7. Add pepper to taste.
8. Serve with croutons (but they're not low-carb)
