2 cup Almond Meal/Flour (1/4 cup is 28g) 1/2 cup Erythritol So Nourished brand 2 tsp Baking Powder 1 tsp Cinnamon, ground 1 tsp Ginger, ground 1/4 tsp Cloves, ground 1/4 tsp Salt 2 large Egg, 1/3 cup Coconut Oil or butter1/3 cup (8 fl oz) Water, tap 1/2 tsp Vanilla Extract 3 tbsp chopped Pecans
Grease a 7" cake pan. Put trivet in instant pot and add 1 cup of water
In a large bowl mix together by hand the flour, sweetener, baking powder, cinnamon, ginger, cloves and salt. Stir in the eggs and melted coconut oil or butter and vanilla extract until well combined. Spread in pan and top with pecans. Cover pan tight with aluminium foil and put in instant pot. Close lid set to seal and cook for 40 min. or on cake setting. Let it do a natural release for 15 min..
