Blackberry Breakfast Bars

2 cups fresh or frozen blackberries2 tablespoons granulated sugar2 tablespoons water1 tablespoon lemon juice1/2 teaspoon ground cinnamon1 cup all purpose flour1 cup quick cooking rolled oats2/3 cup packed brown sugar1/4 teaspoon ground cinnamon1/8 teaspoon baking soda1/2 cup butter melted
In a medium saucepan combine berries, sugar, water, juice and cinnamon.
Bring to a boil then reduce heat and simmer uncovered for 8 minutes.
Stir frequently then remove from heat.
In mixing bowl stir together flour, oats, brown sugar, cinnamon and soda.
Stir in melted butter until thoroughly combined.
Set aside 1 cup of the oat mixture for topping.
Press remaining oat mixture into an ungreased square baking pan.
Bake at 350 for 25 minutes.
Carefully spread filling on top of baked crust.
Sprinkle with reserved oat mixture.
Lightly press oat mixture into filling.
Bake at 350 for 25 minutes.
Cool in pan on a wire rack then cut into bars.

This was very good. I used fresh blackberries. The fruit and sauce didn't seem to thicken at all, so I added 3/4 tsp of cornstarch as I cooked and stirred the fruit mixture. It's sweet -- more like a dessert than a breakfast bar, to me. If I make it again I will use whole wheat flour for nutrition. - 5/13/09
