Dad's Brussels Sprout and Potato Tots

1 tsp Celtic Sea Salt, Fine Ground (by URLEEC) 3 serving Veg: Garlic, raw, 3 clove serv. (by JERSEYDEBBIE23) 2 serving Potato, Russet (Large-4 in. diam. 10.5 oz) (by 1ZIPPYC) 1 tsp Oregano, ground 1 tsp Sage, ground 20 oz brussels sprouts, raw (1 oz) (by BBAKSA) 2 serving 1 Egg- large, fresh
Clean Brussels sprouts, remove outer leaves, trim stems and halve. Spray cookie sheet and Brussels sprouts halves with olive oil cooking spray. Bake at 400 degrees for 20 minutes, remove and let cool.
Clean and bake potatoes at 400 degrees for 40 minutes, remove and let cool.
Shred Brussels sprouts and grate potatoes, skin and all. In a large mixing bowl, mix sprouts, potatoes, eggs and all other ingredients until well mixed.
Form into 1 oz tots. Spray cookie sheet with cooking spray and place tots on sheet so they do not touch each other.
Bake at 400 degrees for approximately 20 minutes. Turn once at 10 minutes.
