Bran Flax Muffins

Ingredients
1 1/2 cups White Flour3/4 cup Flaxseed Meal3/4 cup Oats3/4 cup Brown Sugar2 tsp. Baking Soda1 tsp. Baking Powder1/2 tsp. Salt2 tsp. Cinnamon1 1/2 cups Apples, shredded1 1/2 cups Carrots, shredded1/2 cup Raisins3/4 cup Walnuts, chopped3/4 cup nonfat Milk2/3 cup Egg Starts (2 eggs)1 tsp. Vanilla
Directions
Preheat oven to 350 degrees, lightly grease muffin tins.
Mix flour, flaxseed meal, oats, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins, and nuts. Combine milk, eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until all ingredients are moistened. Do not over mix.
Fill muffin tins 3/4 full. Bake for 12 - 15 minutes. Yields 65 mini muffins

    It was good, I might make it again with honey instead of the brown sugar. Also the recipie didn't include Bran so I added 1/2 a cup. - 7/30/08
