Linda's Lemon Icebox Pie

Ingredients
Ingredients:Pie crust, graham cracker, 1 pie shell (9" dia) Cream Cheese, 16 oz Sweetened Condensed Milk 14 ozLemon Peel or zest, 1 tbsp Lemon Juice, .2/3 cupCool Whip Lite, 1 scoop
Directions
In a medium mixing bowl, beat cream cheese until fluffy. Add condensed milk, lemon juice, and lemon zest or rind. Mix until smooth. Pour mixture into crust. Refrigerate at least 2 hours -overnight is better, before serving, Garnish with whipped cream or Cool Whip and mint leaves if desired.
