Ingredients
1tbsp Cinnamon1tsp Salt1/4 tsp Baking Soda1/4 tsp Baking Powder1 Cup Granulated Sugar1 Cup Flour1/4 cup Vegetable Oil1 Cup Zucchini1 Cup Walnuts1 Large Egg
Directions
Preheat oven to 350 degrees.Mix together cinnamon, salt, baking soda, baking power, Flour into one bowl. Mix Sugar, vegetable oil , egg, and Zucchini and walnuts into another bowl. Stir in the Flour mixture until well blended. Grease the bottom and sides of loaf pan and add mixture. Cook 45-60 minutes. Cool and cut into thin slices.

    It is great. I used half whole wheat flour and half white flour. And i used sugar in the raw. next time I'm going to use only whole wheat flour and less sugar. But it is gooooood. - 7/21/08
