Ratatouille and chicken breast crockpot

Ingredients
1 lg Eggplant, diced3 small sliced Zucchini, diced6 plum tomato, diced2.0 medium onions diced0.5 cup Olive Oil4.0 tbsp dried Basil4.0 tbsp Parsley, dried5 lbs Tyson boneless, skinless chicken breast1 cup Dressing, Kraft Signature Extra Virgin Olive Oil Tuscan Italian
Directions
Toss chicken in dressing then place in bottom of crockpot. Dice all veggies and toss with spices and olive oil. Pour on top of chicken. Cook on low for 8 hours. May serve with rice or pasta.
