Ingredients
1 eggplant, peeled (yield from 1 Eggplant, fresh 8 oz Ground Turkey - 97% fat free extra lean white turkey 12 medium Mushrooms, fresh 1 can (6 oz) Tomato Paste 1.25 cup Hunt's Fire Roasted Diced Tomato 2 clove Garlic 2 small Onions, raw 5 cup, sliced Zucchini 12 leaves Basil 4 cup Spinach, fresh 2 medium (approx 2-3/4" long, 2- Sweet peppers (bell)
Directions
Turn Instapot on to "saute." Add olive oil. Brown onions. Add ground turkey and brown. Add mushrooms and garlic. Add eggplant. Add zucchini, peppers and tomato paste and diced tomatoes. Add water if dry. Set InstantPot to Pressure Cook for 10 minutes. Then allow to release naturally. Serve on its own or over spaghetti squash.
