0.92 cup Flour - Gold medal all purpose flour0.58 cup Almond Meal/Flour1 tsp Cinnamon, ground1/2 tsp Baking Soda1/4 tsp Salt1/4 tsp Baking Powder1/4 tsp Nutmeg, ground1 cup Sweet Additions Stevia1 cup shredded Zucchini1/4 cup Extra Virgin Olive Oil1 Egg5 oz. Dark chocolate chips
In a mixing bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. In another mixing bowl combine sugar, shredded zucchini, cooking oil, egg, and lemon peel mix well. Add flower mixture; stir just until combined. Stir in chocolate chips.
Pour batter into a greased 8x4x2-inch loaf pan. Baked in a 350 degree oven for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Wrap and store overnight before slicing.
