Ingredients
1.5 cup Chickpeas (garbanzo beans) - 1 can1.5 cup Beans, black - 1 can793 grams Crushed Tomatoes - 1 can3 tbsp chopped Shallots 1.5 tbsp Extra Virgin Olive Oil 1 tablespoon chipotle chili powdersea salt to tastelemon juice to taste
Directions
Using the saute feature on your instant pot, add oil and wait until it shimmers.
Saute the shallots until lightly browned and caramelized
Add canned beans and tomatoes with can liquids.
Add one cup of water, chipotle powder and sea salt
Use the soup function on your instant pot. Cook for 10 minutes.
The soup will be slightly thick and rich. Add lemon juice to brighten flavors
