Chicken with Apples and Cider

Ingredients
2 Tbsp Vegetable Oil1 Granny Smith apple, cored and sliced1 Tbsp packed brown sugar4 4oz boneless chicken breasts1/4 tsp each of salt, cinnamon, and freshly ground black pepper1 medium onion, thinly sliced1/2 cup apple cider1/4 cup cider vinegar3 cups hot cooked wide egg noodles
Directions
Heat 1 tbsp oil and saute the apple 5 minutes, until lightly browned. Sprinkle with brown sugar. Cook, stirring frequently, until tender, 3-5 minutes longer. Transfer to a plate.

Sprinkle the chicken breast with the cinnamon, salt and pepper. Heat the remaining oil in the same skillet. Saute chicken until browned. 4-5 minutes each side. Transfer to another plate.

In the skillet, cook the onion, covered, until tender, 6-8 minutes. Stir in the cider and vinegar. Simmer for 2 minutes. Return the chicken to the skillet; simmer, spooning the sauce over chicken, until chicken is cooked through and liquid is reduced by half, 4-5 minutes.

Return apples to skillet, cook 2 minutes until heated through. Serve over noodles.

    This was a great meal! I had to make some changes, due to lack of ingredients on hand:1/2 cup apple cider vinegar and 1/8 cup water in place of apple cider, bow tie pasta in place of egg noodles, and dried onion flakes.

    My husband gave this a five star rating and didn't even care that it was a Weight Watchers recipe. Fairly easy to make and looks very nice when you transfer to a platter. My kids weren't happy about the onions, but enjoyed the rest of the meal and were looking for extra apples. - 8/18/08

    Thanks for the rating! Glad you guys liked it. I hate onions, so I didn't eat them either, just didn't put them on my plate. It still lends a good flavor to the dish. We wanted more apples too! :-)
