Mme McG Chickpea vegetable salad

Ingredients
2 cup Chickpeas 2 cup cherry tomatoes, halved1/2 cup Red Onion, raw (chopped) 1 cup Red Bell Pepper Chopped Raw 1 cup Cucumber Seedless Long English 2 oz Artichoke Hearts - quartered, canned60 grams light Feta Cheese10 leaves Basil, thinly sliced6 tbsp Red Wine Vinegar 2 tsp Garlic - minced 1 tsp Sifto Table Salt 1/2 tsp Black Pepper, ground2 tbsp Extra Virgin Olive oil
Directions
Drain and rinse chickpeas. Combine chickpeas, chopped vegetables, artichoke hearts, feta cheese and basil in a large bowl. Mix well. Whisk oil, vinegar, garlic, and oregano together well and pour over salad. Toss well to coat. Refrigerate for at least 2 hours or overnight and serve. Serving Size: 1/8th of the recipe
