Chicken Stew

Ingredients
1 medium (2-1/2" dia) Onions, raw 2 cup, chopped Carrots, raw 1 cup, pieces or slices Mushrooms, fresh 4 cup (8 fl oz) Chicken Broth 1 cup Peas, frozen 4 cup, chopped or diced Roasting Chicken, light meat 1 tbsp Bob's Red Mill Potato Starch 1 cup Canned Diced Tomato (by LILSWEETIE)
Directions
Dice vegetables. Sauté in olive oil. Add potato start and stir for a minute. Add in chicken broth and canned tomatoes. Add salt and pepper to taste. Cover, turn heat to low and cook for 10-15 minutes. Add chicken and cook for another 10 minutes. Serve.
