Mediterranean chicken -Paleo

Ingredients
32 oz Tyson boneless, skinless chicken breast 3 tsp McCormick Grill Mates Montreal Chicken Seasoning (by FRANCLYN) .5 small Onions, chopped 3 clove Garlic, minced 8 oz Mushrooms, chopped2 Tomatoes, Roma, chopped 8 oz napoleon quartered artichoke hearts, chopped1.5 oz Bella Sun Luci Sundried Tomatoes, chopped1 can Black Olives 2 tbsp Extra Virgin Olive Oil 1 tbsp Balsamic Vinegar 1 tsp Parsley, dried 1 tsp Dried Oregano1 tsp Basil (can use 2 tbsp fresh)3 cup Spinach, fresh, choppedSalt and Pepper to taste
Directions
Cut up chicken into 1 inch cubes. Cook in skillet with Montreal Chicken seasoning until cooked through and starting to turn a little golden. Remove from pan. Add 1 tbsp oil and saute onions 3-4 mins. Add garlic and cook a minute. Add sliced mushrooms and cook until golden. Salt and pepper to taste. Add 1 tbsp oil and balsamic vinegar then add in tomatoes, sun-dried tomatoes, artichoke hearts and olives, parsley, oregano and basil. Stir for a few minutes. Add chicken back in and spinach. Cook 1-2 minutes to let spinach wilt. Garnish with fresh cilantro.
