6 serving Jello Sugar Free Fat Free chocolate fudge pudding mix (powder only) 1.75 cup Milk, nonfat (skim milk) 8 oz Cheese--Philadelphia Cream Cheese 1/3 less fat 16 tbsp Coconut, shredded sweetened 1.5 cup Whipped topping, frozen, low fat (like Cool Whip) 2 cup Yogurt Plain Greek Yogurt, non-fat 2 serving Stevia - Pure Via All Natural Zero Calorie Sweetener .25 tsp Coconut Extract (by MRSMCGARRY)
Beat cream cheese and 2 Tb sweetener until smooth. Whisk in 1 c greek yogurt until smooth. Spread over prepared crust.
Mix pudding, milk, 1/4 tsp coconut extract until smooth. Mix in 1 c greek yogurt, 1/2 c toasted coconut, 1/4 tsp coconut extract until smooth. Spread over cream cheese layer. Top with Cool Whip and sprinkle with remaining toasted coconut. Chill at least 4 hours before serving.
