zucchini ravioli

Ingredients
2 cup, sliced Zucchini 1 cup Ricotta Cheese, whole milk 1 large Egg, fresh, whole, raw 6 tbsp Parmesan Cheese, grated 1.5 cup Silver Palate Low Sodium Marinara (by LROZYLA)
Directions
slice zucchini in strips. Mix ricotta cheese, egg, parmesan cheese in bowl with basil and garlic of your taste. Fold zucchini strips around 1 tbsp of filling and place in baking dish greased with olive oil. Pour marinara sauce over ravioli and add mozzarella and/or parmesan cheese on top. Bakes for 25-30 minutes.

    Added 3 c raw spinach saute with 1/2 cup chopped mushrooms and 3 cloves garlic to the cheese mixture. Added another cup of chopped mushroom to the sauce before baking. - 2/9/20
