EGG ROLL BOWL

1 tbsp olive oil1 small onion, chopped2 cloves fresh garlic, minced1 tbsp fresh ginger, minced1 tbsp sesame oil2 tbsp soy sauce, or tamari2 tsp rice vinegar1 small cabbage, shredded1 medium carrot, shredded1/3 cup broth or watersalt and pepper, to taste2-3 green onion, chopped2 tsp Benefiber
Heat a large skillet over medium heat. Add olive oil, then onions, garlic, and ginger to the pan. Stir well, and cook until softened and translucent, about 5 minutes.
Add sesame oil, soy sauce, and rice vinegar, Benefiber and stir well.
Add cabbage and carrot, and broth. Stir to coat. Cook, stirring regularly, for 5 minutes, until slightly softened. If you'd like more tender cabbage, cook 5 minutes more.
Garnish with green onions and sesame seeds.
