150 Zucchini 2 tsp President's Choice Prepared Dijon Mustard 0.25 serving Lemon, fresh squeezed, juice of one whole lemon 0.66 tbsp Honey 0.25 cup currants - dried (by TTSHOLLAND1) 0.66 tbsp Mayonnaise, Hellman’s Light 55 gram(s) Pepper, Red Bell (1 small) 3 serving Green Onion (fresh-1 stalk) 0.20 cup, chopped Carrots, raw 1 tsp Dill weed, dried 1 cup, chopped or diced Broccoli, fresh
Dice broccoli. Microwave for 2 minutes, then immediately plunge into ice cold water. They should be tender-crisp. Drain, dry with a towel.
Dice onion, zucchini and red pepper. Toss in large bowl with broccoli and currents
Mix together mayo, honey, dill and dijon. Toss into salad. Squeeze lemon juice over top and toss lightly again, just before serving.
