Sweet and Spicy Lentil Chili

Ingredients
1 tablespoon olive oil1 large onion, chopped1 red bell pepper, seeded and chopped2 garlic cloves, miced2 tablespoons chili powder1 1/2 cups lentils28 oz can crushed tomatoes1/2 teaspoon allspicecayenne pepper to tastesalt and pepper2 cups water1 cup apple juice
Directions
Heat oil in skillet over medium heat. Add onion, bell pepper and garlic; cook until softened. Stir in chili powder and cook 30 seconds longer.

Transfer mix to 4 qt slow cooker. Add lentils, tomatoes, alls[ice, season with cayenne, salt and pepper. Stir in water and juice. Cover and cook on low 8 hours. Add more water if chili gets too thick.

    I love this! My changes - I substituted 1/2 cup unsweetened applesauce and 1/2 cup water for the apple juice. I also used 2 cups each of chopped bell peppers and celery. 1 couple of dollops of sweet chili sauce is perfect for our family - 5/15/16
