Watermelon Salad

Ingredients

2 c arugula, watercress, or baby greens1 c watermelon cubes (about 1 inch size)2 sq inches feta cheese, in large crumbles1 t olive oil2 t balsamic vinegarfew leaves fresh basil, optional
Coat greens with olive oil. (You can do this by placing both in a lidded container and shaking thoroughly or spraying greens with olive oil from a spray bottle or Misto.)
Top greens with watermelon and feta, sprinkling drops of balsamic on top.
Sprinkle the salad with Chiffonaded basil (roll leaves like you would roll up a poster, then slice thinly, like you're slicing little rolls off the poster's end. You should end up with thin, pretty strips).
Try to get a little bit of each ingredient in every bite, it tastes wonderful and summery! It looks and tastes fancy, but is easy enough for every day or to make a big batch for a party!
