Mermaidsong's Quinoa Tabbouleh

4 cup Quinoa for recipes info per 1 cup cooked 3 cup slices Cucumber (with peel) 3 cup, chopped or sliced Red Ripe Tomatoes .25 cup, chopped Onions, raw 4 tbsp Fresh Mint (by ROWDYHOLTZY) 1 cup Parsley 1 serving Lemon, fresh squeezed, juice of one whole lemon 5 tbsp Extra Virgin Olive Oil 4 dash Salt
Cook quinoa according to package directions. Freeze extra for later use. Chop cucumber and tomato. Dice onion. Red onion is nicer but white works too. Chop herbs and juice the lemon. Add olive oil and salt. Cool quinoa and add only 4 cups cooked for a good ratio. Salt to taste.
Serving Size: Makes about 5 2 cup servings for bowls
