Broccoli-Quinoa Skillet with Chicken

Ingredients
2 Tbsp olive oil 2 cups chopped onion 3 (8-oz) boneless, skinless chicken breasts, cut into bite-size pieces 1 cup quinoa 2½ cups low-sodium chicken broth 2 (10-oz) pkg frozen chopped broccoli 1 tsp salt ½ tsp pepper ¾ cup 2% reduced-fat Greek yogurt 1¼ cups shredded reduced-fat sharp Cheddar cheese
Directions
Preheat broiler. Heat oil in a large skillet or Dutch oven over medium-high heat. Add onion; sauté 2 minutes. Add chicken; sauté 3 minutes. Add quinoa and broth; bring to a boil. Cover, reduce to medium heat, and cook 12 minutes. Stir in broccoli, salt and pepper; cook 5 minutes or until broccoli is tender. Remove from heat. Stir in yogurt and ¾ cup cheese. Sprinkle ½ cup cheese on top. Broil 2 to 3 minutes or until cheese is melted and bubbly.
