1 tbsp olive oil1/2 head, medium cabbage, chopped1 cup, diced Celery, raw 1 cup, chopped Onions, raw 1 cup, chopped Carrots, raw 3 cloves Garlic 4 cup Swanson Chicken Fat Free Chicken Broth Less Sodium 1 14.5 oz can diced tomatoes, no salt added1 14.5 oz can green beans, No Salt Added 1 large tomato, diced1 tbsp Dried Oregano 1 tbsp dried Parsley1 tbsp dried Basil 1/2 tsp Kosher Salt1/2 tsp black Pepper
In large stockpot over medium heat, saute diced onions, carrots, and celery in olive oil until softened. Stir in minced garlic.
Stir in chicken broth, tomatoes (canned with juice and fresh diced), chopped cabbage, and spices, salt and pepper.
Bring to boil, reduce heat, and simmer for 25 minutes. Taste and adjust seasonings if necessary.
Refrigerate leftovers.
