Summer Quinoa & Grilled Corn Salad

2 ears Sweet Corn, Roasted or as you prefer to prepare1 cup Quinoa, any color (makes 2 cups prepared).5 cup, chopped red or sweet Onion, raw 4 sliced Radishes 1 15 oz can Black Beans No Salt Added, drained 6 tbsp Lime Juice, juice of 3 lime 3 tbsp Grapeseed Oil 1 tbsp Honey 1.5 tsp Cumin seed 2 oz Feta Cheese or Cotija cheese, crumbled.25 cup fresh Parsley or Cilantro, roughly chopped
1. Grill, boil or microwave corn. When cool, cut kernels from cob.
2. Prepare quinoa, cook per package directions
3. Combine lime juice, oil, honey, cumin, parsley
4. Combine remaining ingredients and toss with dressing.
5. Store any left overs in fridge for up to 3 days.
