Couscous with Chicken and Veggies

Ingredients
1 cup couscousWater1 cup (8 oz) chicken breast, cooked, cubed1 tsp olive oil1 cup onions, chopped1 cup bell pepper, chopped1 cup carrots, chopped1 clove garlic dicedSalt and pepper to taste
Directions
1. Prepare couscous according to package directions.
2. In skillet, heat oil and add onions, peppers and carrots, garlic, salt and pepper, saute until carmelized.
3. Add in cubed chicken to warm.
4. When coucous is done, add to mixture, stir well and heat through.

    I think this taste great, but just so you realize the recipe says one cup couscous, but the nutritional breakdown shows that as one cup cooked couscous. I used one cup dry (cooked then in water), and added the extra couscous to my daily tracker - 8/12/10

    Sorry, no-one in my family liked this. It may be that we just don't like couscous, but this was lacking in flavor as well. I won't be making this again. - 4/2/09

    oh my gosh, so good! I added asparagus instead of the bell pepper because that was what I had on hand. Yummy! This will be added to my recipe collections and rotated :) - 1/28/09
