Rhubarb Cake

Ingredients
6 1/2 cup diced Rhubarb (6-7 c)1 2/3 cup Flour2 tsp Baking Powder 1/8 tsp Salt 1/2 cup Butter1 1/4 cup Granulated Sugar 3 eggs 1 tsp Vanilla Extract 1/2 c Almonds, sliced
Directions
Heat oven to 400 and grease a large spring form pan.
Chop rhubarb.
Mix together flour, baking powder and salt. (whisk or sift)
Beat butter and sugar for about 5 minutes then beat in eggs 1 at a time. Beat in vanilla.
Slowly add flour mixture, beating on low; do not over mix.
Fold in rhubarb.

Spoon/pour into pan and smooth the top. (It will be very thick with all that rhubarb.) Sprinkle almonds over top.
Bake about 35 minutes, till inserted toothpick comes clean.
