Veggie Fajitas

Ingredients
1 yellow pepper1 red pepper1 green pepper2 cartons of chopped mushrooms1/4 cup of balsamic vinegar1/4 cup of olive oil2 tbsp chili powder1/2 tsp salt1/2 tsp pepper
Directions
Cut the peppers into thin strips, set in a baking dish along with the mushrooms. In a separate bowl, mix all the wet ingredients together. Pour over vegetables. Set the oven for 375 and cook for 30 minutes, or until vegetables are browned.

*Especially good when cooked on the grill!
I serve this in a flour tortilla with a little bit of colby cheese. YUM

    I made this last week and it was a little too plain tasting. Maybe adding some onions might help. My boyfriend and daughter really didn't care for it, though I thought it was ok. I won't make this one again. - 4/19/08
