1.0 tbsp, crumbled Bay Leaf0.25 tsp Pepper, black1.5 tsp Salt4.0 tbsp, drained Capers, canned2.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh12.0 clove Garlic1.0 medium (2-1/2" dia) Onions, raw3.0 tbsp Extra Virgin Olive Oil2.0 tbsp (C) Vinegar, Red Wine (Gr Value)4.0 oz Apothic Red Wine1.5 cup Hunt's diced tomatoes , basil, garlic & oregano
Cut eggplant into 1/2" cubes, slice garlic put everything in the slow cooker do not stir! Cook high 3 hours, the gently stir and cook 2 more hours at high.
