Black beans and Quinoa

1 tsp. avocado oil (or another high heat oil)1 medium onion, diced3 cloves of garlic, minced 3/4 c. organic quinoa, rinsed1 1/2 c. Kitchen Basics Vegetable Cooking Stock, unsalted1 tsp. ground cumin1/4 tsp. ground cayenne pepper (optional)1 c. kernels Yellow Sweet Corn, Frozen 1 10 oz. can RO-TEL Diced Tomatoes & Green Chilies 2 15 oz. cans black beans, rinsed and drained 1/2 c. fresh cilantro, chopped3-4 c. mixed greens (optional)
1. in a large nonstick skillet, sautee onions in avocado oil over medium high heat until slightly browned, about 10 minutes. Add garlic and quinoa halfway through.
2. Stir in vegetable stock, cumin and cayenne and bring to a boil. Reduce heat and simmer covered about 20 minutes or until liquid is absorbed and quinoa is tender.
3. Stir in corn, diced tomatoes & green chilies, and black beans and cook covered for about 5 more minutes.
4. Remove from heat and stir in cilantro.
Serving Size: About 11 1/2-cup servings
