Lasagna in a Bowl

Ingredients
1/2 cup eggplant marinated in Italian Dressing (or other low carb pasta alternative)1/4 cup park skim ricotta cheese1/4 cup mozzarella cheese1/4 cup ground beef1 tbsp grated parmesan cheese1/2 cup low carb spaghetti sauceItalian seasonings to taste
Directions
1. Cook the "pasta alternative", be it spaghetti squash or something else (Eggplant in my case).

2. Cook the meat with salt and pepper to taste. Drain off the fat.

3. Heat the ricotta (microwave works best)

4. Layer in bowl: pasta alternative, ricotta cheese, ground meat, mozzarella, sauce, parmesan.
