Mint Tabbouleh Salad, using Couscous

Ingredients
3 cups cooked couscous1/2 lemon for juice2 tsp garlic Olive oil as needed1/2 cucumber, peeled, seeded, and diced1 small green apple, cored, peeled, and diced1/4 cup tomato, diced2 tablespoons fresh mintsalt and pepper to taste
Directions
Get a large bowl. Add ingredients as they are chopped. Add couscous and mix adding oil as needed to prevent clumping. Add lemon juice and mix. Chill until cool. Eat. 1 serving is 1 cup.
