Zitters (Easy Zucchini Fritters)

Ingredients
3 cup Zucchini grated (2 small or 1 medium zucchini)2 large Egg2 tsp Garlic - minced1 cup Breadcrumbs (such as Progresso/seasoned) 1.5 cup Cheese, grated .25 cup, Onions, raw, chopped
Directions
Whisk 2 eggs together in a large bowl and set aside.
Using a larger hole grater, grate zucchini into the bowl with the eggs.
Add the cheese, garlic and breadcrumbs and use a spoon to mix everything together.
Heat about 1 tbsp of oil (use the oil of your choice) in a skillet over medium-high heat
Add zucchini mixture by spoonful and flatten.
Cook patties until they’re golden brown on both sides.
