Ingredients
2 cup Libby's 100% Pure Pumpkin Puree (by TEQUILAMY) 16 tbsp (1 cup) Natural Sunbutter (made with sunflower seeds) 3.5 serving (1/2 cup) Navitas Raw Cacao Powder (1 serving = 2.5 Tbsp or 14g) 50 gram (1/4 cup) Stevia in the Raw 1 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) 32 tbsp (2 cups) Enjoy Life- Dark Chocolate Chip Morsels (9oz/255g/17 Servings)(tbsp) (by ADGLATT)
Directions
Preheat oven to 350 F
Grease 9x9 baking dish
Combine pumpkin puree, Sunbutter (or other nut or seed butter), cacao (or cocoa) powder, and stevia thoroughly and pour into prepared baking dish.
Bake 20-25 minutes
After brownies have cooled, prepare frosting with canned coconut milk and chocolate chips. Combine into pan on low heat until melted & thoroughly blended to a glossy appearance. Alternately, chocolate chips can be carefully melted in the microwave and then whisk the coconut milk into melted chocolate chips until thoroughly blended to a glossy appearance.
